Rice with Cannellini Beans

This is a very colorful and heart healthy dish. Sautéed onions and carrots compliment the cannellini beans along with the flavorful tomato sauce.

Cooking Time: 20 minutes

Serves: 4

1 cup uncooked brown rice or brown basmati rice

2 Tbsp. extra light olive oil

2 carrots, peeled and cut into thin quarters

1 large red onion, peeled, quartered, and finely sliced

1 15.5 oz can cannellini beans, drained and rinsed

½ tsp. red chili powder

¼ cup tomato sauce

1 tsp. salt or salt to taste

Begin cooking the rice using your preferred method. Set aside.
